How do the stances work? Do they affect only attack icons, calculated at the very end, etc...
Example: If I used an
Earthen Scorchstone and "defend", and my opponent used a
Jittery Jipple Potion, how much damage would I take? Would defend cut JJP's icons enough for the ES to block it fully? Or would that 1 icons leaking through be the only thing affected by my stance?
First, "Defense" and the Defend "Stance" are not the same thing. When you use Defend Stance it lowers your opponents possible attack by approximately 20% or so, while also reducing your attack by that much. All stances work thusly. Fierce and Berserk stances increase the
percentage of damage you do to your opponent, while also increasing the percentage of damage you
receive. For example, if you attack an opponent using Berserk stance, you will do approximately 50% greater damage than if you used Cautious stance. This goes for the portion of your attack that your opponent does not block. Also if both of you attack with a stance greater than Cautious, the damage increase is not additive, but exponential: i.e, Berserk + Berserk would be equal to 1.5 * 1.5, or 125% increase.
Damage also depends on each pet's strength and defense boosts, using a formula that my tired brain will not reall at the moment. Suffice to say the formula uses your opponents strength boost against your defense boost, minus blocked icons. In the example you gave above
Earthern Scorchstone would not block any of the Air icons, so potentially all 5 could go straight through to you, multiplied by your opponents strengths boost. If you used the Defend Stance, that potential attack would be reduced by 20%.

What I was thinking was that "defend" would turn his 10 icons of attack into 8, and maybe my ES would block it fully? I'm getting a bit confused now lol.
To phrase it differently...
If my pet has 450 defense, a 10x boost. My opponent has 450 attack, a 10x boost. I use an Earthen Scorchstone and "defend (20% reduction)", he uses Jittery Jipple Potion and "cautious attack (0% change)". How much damage would I take? 0? 8? or something completely different?

What item was I looking at.... I am sorry, today has not been kind, and I had no sleep the night before. I will just crawl away and die of shame now.
But to state the CORRECT answer (unless I am still asleep), your Defense would reduce your opponents potential attack, and the Defend Stance would reduce that potential by 20%, not the other way around.

Haha. So... would I take damage? Keeping in mind that Earthen Scorchstone is a bit fractional...
In a sense, you DO decrease your opponent's attack to 8 icons. HOWEVER, you also decrease the amount you block with your earthen scorchstone. Like kalfeer said, your stance affects both sides.
So you decrease your opponent's attack from
10 total icons, to basically
8.
You also decrease the amount of icons you block from
9 to
7.2 icons.
In essence, your scorchstone will never fully block the Jittery Jipple Potion.

Yes .
Assume you and your opponent both has x1.0 boost .
Your damage done = 5 icons * 1.0 * 1.5 (berserk) = 7.5 damage
Damage blocked = 5 icons * 1.0 = 5 damage
If your opponent uses defend stance , damage done = 7.5 * 0.8 = 6
