This may be too basic a question, but here goes:

My pet has HP 40,Strength 50, and Defence 36.

It's Abilities are Drain Life, Burrow, Fiery Gaze, Heal and Shadow Health.

It's Equipment is Scarab Ring x 2, Grarrl Shield of Terror, Brain Tree Splinters x 2, Improved Lightning Beam, Purple Sticky Hand, and Pale Elixer (for 9HP). I usually get a Bubble Beam with Purple Sticky Hand.

I lost to the Koi Warrior by less (came closer to beating it) each of the first 4 times out. Then we "drew" the next 4 outings. I tried a new approach the last (9th) time out and got killed in 2 turns?!

Does anyone have advice on how I should tackle the Koi Warrior? (I bought a Super U-Bend but got wiped when using it).

You should get the sink ability first(req level 30)
Then, get rid of the pale elixir and get a greater healing scroll.
Brain tree splinters and improved lighting beam are bad
I don't know about the shield because i haven't search, but usually species shields are junk..you'd better get a leaf shield, works good against the koi warrior.
Try to get a stone club if you can afford.

Also, i think there is allready a thread for 1 player help.
