Back in my day, restocking was really easy, I remember the brilliant days of Bakery restocking, each rs I'd aim to get at least 3 things, and I'd usually get more than that, each one gave 4k profit too
Plus on the odd occaision I'd get something fantastic, like a Shadow Usul Plushie

I tried restocking for a week. I got very sick of staring at the spooky food shopkeeper after a week. 
Time is also a big factor. Remember, patience is a virtue.
That's really up to you. I used to sell the moment it hit 100, and never before. So as you can Imagine I have quite a big portfolio because of the constant buying and seldom selling. I am in no hurry though, the stock market is meant to be a waiting game, and I still have adequate neopoints to cover my training(which I only do once a day usually, sometimes not even because of inactivity
) and to keep buying stocks for quite a while.
