Is it better to have an overall armor or a top and bottom pieces of armor? Which is more beneficial for training?
There's some differences. At the lower levels, ie the non-80 overall, they have less combined weapon defence compared to the top and bottom, but it allows you to scroll DEX/accuracy. That way, if you need DEX you use an overall instead.
The ones that give better stats. You probably don't need a dex suit yet at your level, so things that give str would be best. Keep in mind that overalls can be scrolled for dex cheaply with 100%'s, and dex does add a small amount of damage. So a +4 str chainmail with 10 dex added with 100% scrolls would be good for a while.

Looking at the damage formulas for 2-handed swords with maxed mastery, I found out that 4.6 dex = 1 str for max damage, and 2.484 dex = 1 str for min damage. So 10 dex is worth a little more than 2 str.

non-overalls generally give more def, but damage should be more of a concern.
Overall is better in my opinion.

But wear something that fits your character.
